The grapes are entirely dry grown ensuring intensely flavoured fruit. Fermentation is warm in open top fermenters with gentle hand pumpovers twice daily. Plum notes are interlaced with nutty and peppery notes and hints of vanilla rendered from extensive oak aging – 12 months in new French and American oak barrels and 4 years in bottle
