Hill 5 Shiraz CabernetThe Naked Run Hill 5 is a traditional Australian blend of two premium red varieties Shiraz and Cabernet Sauvignon sourced from the Clare Valley. The Shiraz portion is sourced from Hill 5 at Sevenhill and the Cabernet from a small vineyard at Watervale. Small parcels are fermented in open fermenters with a portion of this wine undertaking natural ferment. The wine is fermented for 11 days on skins then pressed to new and older French oak barriques.

The fruit is machine harvested at night when the fruit was at its coolest

The wine is fermented around 15oC until dry then stabilized

After 14 days on skins the wine was basket pressed to older French oak barriques for maturation
