apricots – through a smooth mousse and fine citric bitterness

ripe and textured from time in sweet American oak and bottled unfined

rich and round wine

the herb infusion was blended with one of their reserve sparkling base wines and allowed to mature and integrate for a short period before bottling

oak often adds vanilla and cocoa

tangerine and lemon zest aromas

followed by malolactic fermentation for a creamier mouthfeel

Fermentation takes place during a period of 20-30 days under strict temperature control
