Grown on chalky and siliceous clay gravels which help keep the fruit undiluted and nourished. The grapes are harvested at night to preserve freshness. Each terroir is vinified separately. They are destemmed before a short skin contact maceration and when it comes to fermentation

The juice is fermented in stainless steel tanks before being allowed to rest on its yeast lees for 8 months
